Instructions

1-First, place the 8 large eggs in a single layer in a pot and cover with cold water about an inch above them. Heat on medium-high until the water bubbles, then add salt and bring it to a rolling boil while avoiding excessive boiling to prevent cracking.

2-Boiling and Cooling the Eggs: Once the water reaches a boil, cover the pot, turn off the heat, and let the eggs sit for 12-13 minutes. This gentle method ensures the yolks are perfectly set without turning rubbery. Next, remove the eggs and rinse them under cold running water to cool them down quickly.

3-Preparing the Filling: After cooling, peel the eggs and slice them in half lengthwise. Scoop out the yolks and put them in a food processor along with the 1/4 cup drained and chopped roasted red peppers, 3 tablespoons mayonnaise, 2 teaspoons prepared mustard, and 1/4 teaspoon paprika. Process until the mixture is smooth, then season with salt and pepper to taste for a balanced flavor.

4-Assembling and Garnishing: Transfer the smooth filling to a piping bag or a ziplock bag with a corner cut off. Pipe about 1 tablespoon of filling into each egg white half, shaping it to look like little pumpkins. Use a toothpick to add pumpkin stripes if you like, and insert a piece of chive on top as a stem.
