Ingredients

– 5-7 fresh large scallops

– 5-7 fresh large shrimp, deveined with tails on

– Zest of 1 large lemon

– 1 minced garlic clove

– 1 tablespoon olive oil for marinade

– 4 large basil leaves, chopped (divided)

– 3 tablespoons butter for cooking

– 2 teaspoons olive oil for cooking

– Juice of 1 large lemon for cooking

– Sea salt to taste

– Freshly cracked pepper to taste

– Lemon wedges for serving

Instructions

1-First, prepare your ingredients by rinsing the 5-7 fresh large scallops and 5-7 fresh large shrimp under cold water. Combine them in a bowl with the zest of one large lemon, 1 minced garlic clove, 1 tablespoon olive oil, and half of the 4 chopped basil leaves. Let this mixture marinate in the fridge for 1 hour to soak up those flavors.

2-After marinating, remove the seafood and pat it dry with a paper towel to get that nice crust when cooking.

3-Season with sea salt and freshly cracked pepper to taste, which enhances the natural sweetness.

4-Heat 3 tablespoons butter and 2 teaspoons olive oil in a skillet over medium-high heat until it’s hot and shimmering.

5-Add the scallops and cook for 1-2 minutes, then turn them over for another 1-2 minutes until they have a golden brown crust.

6-Next, add the shrimp along with the juice of one large lemon and cook for 1-2 minutes more until the shrimp turn pink and tender.

7-Finish by topping with the remaining chopped basil and serve with lemon wedges for a fresh twist.
