Instructions

1-Gathering and Prepping Ingredients: First, prepare all ingredients by peeling and deveining the 1 pound of uncooked medium shrimp, dicing the 1/2 cup of bell pepper, and chopping the 1/2 cup of onion along with mincing the 2 cloves of garlic. This setup helps everything move quickly once you start cooking. Remember to have your 2 tablespoons of taco seasoning or homemade blend ready for seasoning.

2-Cooking the Shrimp Mixture: Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the shrimp, along with the taco seasoning, and cook for 2-3 minutes per side until the shrimp turns pink and is fully cooked. Once done, set the shrimp aside and use the same skillet to sauté the onions, bell peppers, and garlic until tender, about 5 minutes. This step infuses the veggies with flavor from the shrimp’s seasoning.

3-Assembling and Cooking the Quesadillas: Lower the heat to medium and place one tortilla in the skillet. Sprinkle half of it with 1/2 cup of your chosen melting cheese, then layer on the cooked shrimp and sautéed vegetables.
