6 romaine lettuce leaves

2 medium tomatoes, sliced

1 package frozen corn, thawed (about 8 oz)

1 tablespoon oil

1 can black beans, drained and rinsed

1 cup shredded cheddar cheese (alternatives include Mexican, Colby Jack, or Monterey Jack cheeses)

1 1/2 cups mayonnaise (lite variety recommended for reduced calories)

1/2 cup salsa (any type)

1/2 cup milk (1% or any kind; sour cream can be substituted)

3 tablespoons taco seasoning

1 tablespoon cumin

Instructions

1-Step 1: Preheat and Prep First, preheat the oven as directed on the chicken tender package and bake them until crispy. While that’s happening, gather your fresh veggies and prepare the homemade Southwest dressing by mixing 1 1/2 cups mayonnaise, 1/2 cup milk, 1/2 cup salsa, 3 tablespoons taco seasoning, and 1 tablespoon cumin in a bowl.

2-Step 2: Cook the Corn Heat 1 tablespoon oil in a skillet and cook the thawed 1 package of frozen corn (about 8 oz) until it’s lightly browned. This adds a nice smoky flavor that ties the wrap together, making it even more appealing for family dinners.

3-Step 3: Assemble the Wraps Once the chicken is done, cut it into small strips. For each wrap, spread a couple tablespoons of the Southwest dressing on a flour tortilla, then layer 1 romaine lettuce leaf, sliced pieces from 2 medium tomatoes, the drained and rinsed black beans, the cooked corn, chicken strips, and 1 cup shredded cheddar cheese. Drizzle extra dressing on top before rolling tightly and cutting in half.
