Ingredients

– 1 Β½ teaspoons smoked paprika

– 1 teaspoon dried oregano

– 1 teaspoon dried thyme

– 1 teaspoon garlic powder

– 1 teaspoon onion powder

– Β½ to 1 teaspoon cayenne pepper (adjust for your preferred heat level)

– Β½ teaspoon black pepper

– Β½ teaspoon salt for the Cajun seasoning mix

– 1 tablespoon olive oil

– 1 tablespoon butter

– 500g boneless, skinless chicken breasts or thighs, cut into 1-inch cubes

– 1 medium yellow onion, diced

– 340g penne pasta

– 1 can (400g / 14.5 oz) fire roasted diced tomatoes, with juices

– 480ml chicken broth

– 225g cream cheese, cubed

– 2-3 green onions, thinly sliced for garnish

– 3 tablespoons honey

Instructions

1-First: mix up your Cajun seasoning in a small bowl and toss half of it with the cubed chicken. Heat the olive oil and butter in a large skillet, then brown the chicken for about 5-7 minutes don’t cook it all the way through just yet. Once that’s done, set the chicken aside and sautΓ© the diced onion in the same pan to build those flavors.

2-Next: add the penne pasta, the rest of the seasoning, diced tomatoes, chicken broth, and remember to stir in that honey for the sweet twist. Bring everything to a boil, then simmer covered for around 10 minutes until the pasta is tender. Finally, mix back in the chicken and cream cheese until it’s all melty and creamy. (I love how this method keeps the chicken juicy and full of flavor!)
