Ingredients

– 1 pound brussels sprouts, stems and outer leaves removed and halved

– 4 cups cubed butternut squash

– 2 tablespoons olive oil

– 2 tablespoons pure maple syrup

– 1 teaspoon garlic powder

– ยฝ teaspoon cayenne pepper

– ยฝ teaspoon cinnamon

– โ…› teaspoon ground cloves or allspice

– Freshly ground salt and pepper to taste

– 4-5 ounces uncooked bacon

– ยฝ cup toasted pecan halves, chopped

– โ…“ cup choice of gorgonzola crumbles, blue cheese crumbles, or goat cheese crumbles

Instructions

1-First, preheat your oven to 425 degrees F and line a large baking sheet with parchment paper to avoid any mess.

2-Spread out the Brussels sprouts and butternut squash on the sheet, making sure not to overcrowd them for that crispy roast instead of steamy veggies.

3-In a small bowl, mix together the olive oil, maple syrup, garlic powder, cayenne pepper, cinnamon, and ground cloves or allspice, then pour it over the vegetables.

4-Season with salt and pepper, toss everything evenly with your hands, and spread it out on the baking sheet for even cooking.

5-Roast for 15 minutes, then flip the veggies and roast for another 15 minutes until they’re golden brown and tender.

6-While the veggies are roasting, cook the bacon according to package instructions, remove the grease, and chop it up.

7-Once everything is done, combine the roasted veggies in a large bowl with the chopped bacon, dried cranberries, and toasted pecans.
