8 cups (about 225 grams) baby spinach or mature spinach leaves

1 medium apple (approximately 150 grams) thinly sliced

1/4 cup (about 40 grams) thinly sliced red onion

1/2 cup (about 60 grams) candied or toasted pecans

1/4 cup (about 30 grams) crumbled goat cheese or shaved pecorino cheese

1/4 cup (about 30 grams) dried cranberries

1/2 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

1/4 cup (60 ml) apple cider vinegar

2 tablespoons (30 ml) honey or maple syrup

1 clove garlic minced

1 teaspoon Dijon mustard

1/2 cup (120 ml) extra-virgin olive oil

1/4 teaspoon salt

1/8 teaspoon freshly ground black pepper

Instructions

1-First, in a large bowl, combine 8 cups of spinach, 1 medium sliced apple, and 1/4 cup of sliced red onion.

2-Next, add about 1/4 cup of the prepared dressing and toss gently to coat the greens.

3-Then, incorporate 1/2 cup of pecans, 1/4 cup of goat cheese or pecorino, and 1/4 cup of dried cranberries, tossing again to mix evenly.

4-Finish by adding more dressing if you like, up to another 1/4 cup, and season with 1/2 teaspoon of sea salt and 1/4 teaspoon of black pepper to taste.

5-Serve right away for the freshest results.

6-To prepare the dressing, shake together 1/4 cup of apple cider vinegar, 2 tablespoons of honey or maple syrup, 1 minced garlic clove, 1 teaspoon of Dijon mustard, 1/2 cup of extra-virgin olive oil, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper in a jar until it’s well mixed.
