– 12 oz whole wheat penne pasta
– 1 cup reserved pasta water
– 1 tablespoon extra virgin olive oil
– 4 oz sun-dried tomatoes packed in oil
– 4 cloves garlic, minced
– 4 oz cream cheese
– 2 oz freshly grated Parmesan cheese
– 2 cups loosely packed baby spinach
– 1/4 teaspoon crushed red pepper flakes (optional)
Instructions
1-Cook the pasta according to package instructions until al dente, then reserve 1 cup of pasta water and drain.
2-In a large skillet, heat the olive oil over low heat, add the garlic and sun-dried tomatoes, and sautΓ© for 2 minutes, stirring frequently.
3-Add the cream cheese and 3/4 cup of the reserved pasta water, stirring over low heat until the cream cheese melts.
4-Stir in the Parmesan cheese and spinach, whisking until the cheese melts and the spinach wilts slightly.
5-Toss the cooked pasta in the sauce until evenly coated, adding more reserved pasta water as needed to achieve the desired consistency. Optionally, top with additional Parmesan cheese and crushed red pepper flakes.
