Ingredients

– 2 tablespoons chili powder

– 1 tablespoon sweet smoked paprika

– 1 tablespoon ground cumin

– 2 teaspoons kosher salt

– 1 tablespoon dried oregano

– 1 teaspoon garlic powder

– 1 teaspoon onion powder

– 1/4 to 1/2 teaspoon cayenne powder

– 1 pound sweet potatoes, peeled and cut into 1-2 inch cubes

– 1 tablespoon vegetable oil

– 1 pound extra lean ground beef

– 1 can (14 ounces) black beans, drained and rinsed

– 1 cup corn, from canned or fresh ears with kernels removed

– 1 pint cherry tomatoes, halved or 2 large tomatoes chopped

– 1 medium avocado, sliced

Instructions

1-Preheat oven: Preheat oven to 400 degrees Fahrenheit to get things going.

2-Combine seasoning: Combine the sweet smoked paprika, ground cumin, kosher salt, dried oregano, garlic powder, onion powder, and cayenne pepper in a small bowl for your seasoning mix.

3-Roast sweet potatoes: Toss the sweet potato cubes with 1 tablespoon vegetable oil and half of the seasoning mix (about 2 tablespoons). Spread them out on a baking sheet and bake for 15-20 minutes until tender.

4-Cook beef: While the sweet potatoes bake, cook 1 pound extra lean ground beef over medium-high heat for 5-7 minutes until fully cooked, then drain excess fat, leaving about 1 tablespoon in the pan.

5-Mix beef and veggies: Add the drained and rinsed black beans, 1 cup corn, and the remaining seasoning mix to the beef. Stir everything together until it’s well coated and heated through.

6-Serve: Serve by arranging the ingredients separately for a family-style meal or assemble them into individual bowls, and don’t forget optional garnishes like sour cream, jalapeΓ±os, green onion slices, cilantro, lime slices, or feta cheese crumbles.
