  • Yield: 6 servings

Ingredients

– 1 small onion, finely chopped

– 1 package taco seasoning

– ยฝ cup water

– 1 can black beans (15 ounces), drained and rinsed (pinto, kidney, or chili beans can be used)

– 1 can diced tomatoes with green chilies (10 ounces)

– ยฝ cup sour cream

– 1 bag corn chips (9.25 ounces)

– 2 cups shredded cheese

– sliced green onions

– additional sour cream

– guacamole

– salsa

– jalapeรฑos

– black olives

– lime wedges

– extra cheese

– shredded lettuce

– hot sauce

Instructions

1-Getting started: Getting started with this walking taco casserole recipe is as easy as pie. First, preheat your oven to 350 degrees F and spray a 13ร—9 inch baking dish with nonstick cooking spray to keep everything from sticking. Prepare your ingredients by browning the ground beef in a skillet over medium heat until almost cooked through, then add the onions and cook until soft and the meat is no longer pink.

2-Next, stir in the taco seasoning and water; bring to a boil. Reduce heat and mix in the beans, diced tomatoes with chilies, and sour cream, then simmer for 8-10 minutes until heated through and the mixture thickens slightly. This step builds those rich, taco-inspired flavors that make the dish so irresistible.

3-Now itโ€™s time to layer. Layer a single layer of corn chips on the bottom of the baking dish, sprinkle with half of the shredded cheese, then add the beef mixture, followed by the remaining cheese. Cover with foil and bake for 15 minutes, then remove the foil and bake for 5 more minutes until the cheese melts and the casserole is bubbly. Finally, remove from the oven and top with more corn chips and your favorite taco toppings for a personalized touch.
